چکیده:
مقدمه: در فرمولاسیون فرآورده های گوشتی نظیر سوسیس و کالباس معمولا از برخی مواد پروتئینی غیر گوشتی و یا هیدروکلوئیدهای غیرپروتئینی با هدف بهبود خصوصیات رئولوژیکی، تغذیه ای و کاهش میزان چربی استفاده می شود که در این بین، ژلاتین یکی از گزینه ها می باشد. در این مطالعه نیز، از ژل ژلاتین حاصل از استخوان گاو با هدف کاهش مصرف گوشت و بررسی اثر آن بر روی ویژگی های فیزیکوشیمیایی و حسی فرآورده نهایی سوسیس استفاده گردید. مواد و روش ها: پودر ژلاتین با منشا گاوی، تحت آزمون های فیزیکوشیمیایی (رطوبت، خاکستر، پروتئین، چربی، pH، بلوم و ویسکوزیته) قرار داده شد. سپس ژل 20 درصدی از ژلاتین تهیه و در مقادیر 0، 3 ، 5 ، 7 ، 10 درصد در فرمولاسیون سوسیس معمولی بعنوان جایگزین گوشت مورد استفاده قرار گرفت. نمونه ها در دو نوبت تهیه و تحت آزمون های شیمیایی، فیزیکی (ویژگی های رنگ و بافت) و ارزیابی حسی قرار داده شدند. یافته ها: میزان رطوبت و چربی در کلیه تیمارها کمتر از نمونه شاهد بود و حداکثر کاهش در تیمار حاوی 10درصد ژلاتین (به ترتیب معادل 69/ 3 و 87/ 3 درصد) مشاهده شد. نتایج آنالیز الگوی بافت نمونه ها نشان داد با افزایش درصد ژلاتین سفتی بافت کاهش ولی بهم پیوستگی و انسجام آن افزایش می یابد. همچنین افزودن ژلاتین منجر به افزایش پارامترb* در نمونه های حاوی ژلاتین در مقایسه با نمونه شاهدگردید. از نقطه نظر ویژگی مقبولیت کلی، در آزمون ارزیابی حسی، نمونه های حاوی ژلاتین امتیاز بیشتری نسبت به نمونه شاهد کسب نمودند. نتیجه گیری: با در نظر گرفتن کلیه نتایج مربوط به آزمونهای ویژگی های فیزیکوشیمیایی و حسی، تیمار حاوی 5 درصد ژل ژلاتین به عنوان بهترین تیمار معرفی گردید.
Introduction: In the formulation of meat products such as sausages, some non meat proteins
and non protein hydrocolloids are usually employed to improve the rheological properties,
nutritional value and reduce the fat content, therefore gelatin might be considered as an option
among others. In this study, bone- gelatin gel has been used in beef sausage in order to reduce
the amount of meat and also evaluate its effect on the physicochemical and sensory properties
of the final product.
Materials and Methods: Physicochemical analysis (moisture, ash, protein, fat, pH, bloom
and viscosity) have been accomplished on bovine bone gelatin. A 20% gel of gelatin was
prepared and used at the concentrations of 0, 3, 5 and 10% as meat substitute in the sausage
formulation. Samples were produced in two batches and analyzed for chemical, physical and
sensory characteristics.
Results: Moisture and fat contents of all of the samples were lower than the control, therefore
in sausage with 10% gelatin, the highest reductions (3.69 and 3.87%, respectively) were
observed. The results of texture profile analysis showed that by increasing gelatin
concentration in the formulation, the hardness was decreased but cohesiveness was increased.
Meanwhile the addition of gelatin leads to an increase in the parameter b* as compared to the
control. All of the gelatin- containing samples obtained higher scores from overall
acceptability aspect in the sensory tests.
Conclusion: According to the results regarding physicochemical and sensory tests, the
sample containing 5% gelatin gel might be selected as the most suitable formulation.
